Jeff and I had what I assume will be the last dinner out we have in a long, long time last night. We went to Vesta Dipping Grill, and my friend Tara’s husband (Joe) was our server – he was amazing. They have a lactose-free menu, so that was fantastic – Jeff and I both ordered off it so that I could have a little bit of what he got, too. Before our meals came, Joe had brought us several small appetizers – a coconut curry soup shooter and duck confit with a champagne gelee. So good! Jeff ordered the smoked and grilled duck breast for dinner, and I ordered the garlic grilled scallops – holy YUM. Joe had the pastry chef, Adam, prepare a special dairy-free dessert for us (the first time Adam’s done that for anyone, and Joe’s worked there for 5 years), and it was TO DIE FOR. It was a pear spice cake served with lemon sorbet and caramel sauce. We had a bottle of wine and some dessert drinks, too. Our night out was more than I could have asked for, and we cannot wait to go back someday!!!

This morning I decided to take the afternoon off from the NICU. I have far too many things to get done today, and not nearly enough hours in the day to get them done. My trips to the NICU during the day take up around 4-5 hours, and I need those hours today to run errands. I am trying desperately not to feel guilty about not seeing our boys until tonight (with Jeff), but it’s really, really hard to not feel bad.

The one bright spot in my day of getting tons of things done? A hot lunch date with my husband at one of our favorite restaurants down the street! Woo hoo!

So far today has been pretty uneventful. Kerry worked a half day of work and I took the day off to run some errands. Went to the DMV (FUN!!) and took the dogs to the groomer. Neither Kerry nor I had had lunch when she got home so I went out to 5 Guys Burgers and Fries and got us some AWESOME take out burgers. Kerry slept most of the rest of the afternoon which was fine by me, it gave me time to well…sleep too. Not sure that this is what either of us would have wanted for our fifth anniversary under normal circumstances, but considering all we have been through it was exactly what we needed – a day of rest. I’m sure we both would have wanted to go on some amazing getaway to a tropical destination, or even up to the mountains for the weekend but it just wasn’t in the cards, or the bank.

Tonight however, we are getting out of the house. We are headed down to Castle Pines to La Dolce Vita. Kerry got a very generous gift card for her 30th birthday that we have never used so we figured what better day than today (tonight). Once we get to dinner we will both forget about what could have been, and both realize that there is not a vacation in the world that could replace this pregnancy.
